Vegan Black Bean Brownies


Ingredients:

• 1 cup: Whole wheat flour

• ¾ cup: Cocoa powder

• ¾ teaspoon: Baking powder

• ½ teaspoon: Salt

• 1 can (15 ounces): Black beans, drained and rinsed

• ¾ cup: Honey or maple syrup

• ¾ cup: Soy milk (or other non-dairy milk)

• ¾ cup (or more if desired): Chocolate chips (vegan)


Prep Time: 15 minutes

Bake Time: 25-30 minutes

Total Time: Approx. 45 minutes


Instructions

1. Preheat oven to 350 degrees. Spray/grease a 13 X 9 or 9 X 9 pan.

2. Combine all the dry ingredients aside from the chocolate chips (first four ingredients) in a medium/large bowl, stir until combined and set aside.

3. Combine the black beans, honey or maple syrup, and non-dairy milk in a blender. Blend for about 45 seconds, or until ingredients are well mixed together (the mixture will likely be watery and you may be able to see little pieces of black bean skin).

4. Pour the bean mixture into the bowl of dry ingredients and stir until well mixed.

5. Stir in the chocolate chips.

6. Put the mixture into the greased pan and nicely spread out.

7. Put the pan in the oven at 350 degrees and bake for 25-30 minutes or until fork/toothpick comes out clean.

8. Remove from the oven and allow to cool… or if you’re like me, don’t allow to cool and just dig in.
